TASTING NOTES
Bright, attractive raspberry pink color. Very fresh, expressive red fruit fragrance of strawberry, raspberry and red currant with floral overtones. Delightful tangy acidity. Smooth texture. Excellent length and balance. Truly an amazing rosé.

PROFILE
- Three traditional varietals blended together :
          - Cinsault 80%
          - Grenache Noir 10%
          - Syrah 10%
- Vine training : Attached, short pruning, single shaft. Minimal spraying, tilled soil
- Annual production : 3 200 cases
- Average yield : 45 hl/ha

WINEMAKING
- Destemming and Crushing : 100 %
- Length of Maceration : very short, between 8 and 15 hours, then the juice is run off
- Temperature of Fermentation : cold fermentation, around 68°F
- Yeasts : selected regional indigenous yeasts
- Malolactic Fermentation : 100 %
- Bottling : in its youth (6 months) at the end of winter after the harvest, for freshness.

FOOD AND WINE AFFINITIES
As an apéritif with friends on the patio or deck, a wide variety of summer dishes and starters, mixed salads, cold cuts, tabouleh, grilled fish and shellfish, gambas. Lebanese hummus, beef or lamb kebabs.
Serve chilled (50°F) rather than cold, to enjoy its complex, delicate fragrance.
