TASTING NOTES
Magnificent intense purple color, nearly black. Multi-layered bouquet of wild and domestic fruits enriched by hints of vanilla, flowers, anise, tobacco and mocha café. Great purity and intensity. Generous, rich, concentrated flavor. Remarkable length with lingering subtleties. Fusion of power and perfect harmony. Not just a wine, an event !

PROFILE
- Three traditional varietals blended together :
     - Vieux Carignan 40% (structure, character)
     - Grenache Noir 30% (body, depth)
     - Syrah 30% (color, fruit, bouquet)
- Vine training : Attached, short pruning, single shaft. Minimal spraying, tilled soil
- Age of vines : very old vines, more than 60 years for our Grenache Noir, rich fruit.
- Annual production : 1 000 cases.
- Average yield : 45 hl/ha

WINEMAKING
- Destemming and Crushing : 100 %
- Length of Maceration : prolonged, 20 days minimum
- Temperature of Fermentation : controlled, cool (77°F)
- Yeasts : selected regional indigenous yeasts
- Malolactic Fermentation : 100 %
- Blending : after 9 months ageing the 3 varietals separately
- Total Ageing : extensive, 26 months in French oaks
- Extra thick, classic design bottle

FOOD AND WINE AFFINITIES
Beef Wellington, roast or stewed game, roast capon, goose or turkey, fine cheese platter.
Decant for aeration and serve at 64°F.
