TASTING NOTES
Attractive, dark ruby red color. Highly expressive, complex nose of red fruit enhanced by floral overtones, as well as anise, eucalyptus, truffles, humus and spice (cinnamon and nutmeg). Extremely fresh on the palate, with good weight. Rich, generous and long. Soft tannin. Perfect balance. Elegance matches power. Astonishing quality for its rank.


PROFILE
- Four traditional varietals blended together :
     - Merlot 40% (bouquet, fruit)
     - Cabernet Sauvignon 30 % (fruit, liveliness)
     - Vieux carignan 20% (structure, character)
     - Grenache Noir 10% (body, depth)
- Vine training : Attached, short pruning, single shaft. Minimal spraying, tilled soil
- Annual production : 6 700 cases
- Average yield : 60 hl/ha

WINEMAKING
- Destemming and Crushing : 100 %
- Length of Maceration : prolonged, 20 days minimum
- Temperature of Fermentation : controlled, cool (77°F)
- Yeasts : selected regional indigenous yeasts
- Malolactic fermentation : 100 %
- Blending : after 9 months ageing the 4 varietals separately
- Total Ageing : extensive, 24 months prior to bottling

FOOD AND WINE AFFINITIES
Cold cuts, baked ham or prosciutto, liver pâté, soft cheese like brie. Serve slightly cool (60°F) in large tasting glasses.
