TASTING NOTES
Rich, dark purple color. In nose and mouth, an array of fresh
red berries, especially cherry and raspberry, with hints of flowers,
spice and zest of orange. Full-bodied with rich, round
tannin. Wonderfully complex and balanced. Satiny texture.
Definite class.

PROFILE
- Three traditional varietals blended together :
     - Vieux Carignan 40% (structure, character)
     - Grenache Noir 30% (body, depth)
     - Syrah 30% (color, fruit, bouquet)
- Vine training : Attached, short pruning, single shaft. Minimal spraying, tilled soil
- Annual production 7 500 cases
- Average yield : 45 hl/ha


WINEMAKING
- Destemming and Crushing : 100 %
- Length of Maceration : prolonged, 20 days minimum
- Temperature of Fermentation : controlled, cool (77°F)
- Yeasts : selected regional indigenous yeasts
- Malolactic Fermentation : 100 %
- Blending : after 9 months ageing the 3 varietals separately
- Total Ageing : extensive, 24 months prior to bottling

FOOD AND WINE AFFINITIES
Barbecued, braised or roast beef, duck or lamb, pheasant,
grouse, partridge, flavorful cheese. Decant for aeration and serve
at 64°F.
