TASTING NOTES
Deep, luminous garnet red color. Refined, complex nose highlighting fully ripened red fruit (strawbery, red currant, blueberry, raspberry) with hints of almond, anise, fines herbes and spice (ginger, grey pepper, cinnamon). Balancing acidity enhances a youthful freshness. Rich and long on the palate with a wonderful velvety texture and soft tannin. Well knit and pleasant overall. Amazing quality for a simple Vin de Pays.

PROFILE
- Three traditional varietals blended together :
     - Merlot 50% (bouquet, fruit)
     - Vieux Carignan 25% (structure, character)
     - Grenache Noir 25% (body, depth)
- Vine training : Attached, short pruning, single shaft. Minimal spraying, tilled soil
- Annual production : 6 700 cases
- Average yield : 60 hl/ha


WINEMAKING
- Destemming and Crushing : 100 %
- Length of Maceration : prolonged, 20 days minimum
- Temperature of Fermentation : controlled, cool (77°F)
- Yeasts : selected regional indigenous yeasts
- Malolactic Fermentation : 100 %
- Blending : after 9 months ageing the 3 varietals separately
- Total Ageing : extensive, 24 months prior to bottling

FOOD AND WINE AFFINITIES
Grilled fish, pork or veal chops or roasts, paella, various kinds of cheese.
Serve slightly cool (60°F) in large tasting glasses.
